Serves 4 (or 2 if you’re really hungry)
1* Kangaroo Island Heritage Hill Pheasant (900gm-1.2kg)
1 pack Barossa Fine Foods sausages
1* 250ml KI Extra Virgin Olive Oil
1* Simon Bryant Big Red Bolt Lentils (dirt(y) inc.)

2 x Shallots
4 x Bay Leaves
1 x Orange
2 x Celery, stalks
5 x Carrots (mixed heirlooms)
1 x Field Mushroom, large
1 * fennel bulb and a bunch parsley
1/4 cup x Juniper Berries, whole
